Recipe of the Week: Moros y Cristianos

The name of this popular dish dates back to the 8th century when the Moors invaded Spain. The black beans symbolize the Moors & the white rice the Christians. This easy to make and even easier to enjoy recipe is sure to be a hit at your dinner table. Serve it with ropa vieja, vaca frita or by its tasty self! Ingredients:

1 ½  cups black beans, dried

2 cups long grain white rice, rinsed

2 tbsp. vinegar

1 tsp. salt 

1 medium yellow onion

1 bay leaf

1 tsp. oregano

1 green pepper, seeded & diced

2 tbsp. olive oil

1 tsp. cumin

4 cloves garlic, chopped

 

Directions:

Heat the olive oil and sauté the onions, green pepper and garlic until tender.  Add the spices, stir for two minutes. 

Add the remaining ingredients to the pot (rice, beans, bay leaf, vinegar) bring to a boil. Reduce heat, let simmer and cook for 25 minutes or until most of the water is absorbed.

Stir in the remaining olive oil and enjoy!
